First of all, hello! It's been a while. I haven't blogged in months. Backstory to this creamy potato kale thing. For sometime now, I have changed my diet. For the last three years, I have noticed a change in how I can digest food. They always say watch when you hit your 20s your body gonna change—well it is. I can't digest spicy foods like I used to. Dairy products make me gassy. TMI, yeah I know. But seriously, dairy isn't good for you.
In addition to cutting spicy foods and somewhat limiting my dairy intake (I say this because I literally OD on taro milk bubble green tea, lol), I have been doing great. I do not eat pork or beef anymore. The list goes on.
Well, lately I have been going crazy and hunting down vegan restaurants in the DC area. And I've always heard about Chaia, but I just never tried it until this weekend. Let me tell you. They are sooooooo good for some plant-based tacos. I opted to get the creamy potato and kale because I am a sucker for kale and starchy ish...I'll get anything with potatoes. I didn't want to just get one taco with those ingredients the same thing so I got a seasonal taco with the skillet corn and the feta mushroom taco.
Aside from the tacos that were surprisingly very filling, my fatty self bought a side of green rice, which basically is mixed with herb pesto over brown rice and topped with feta. The restaurant is almost in what I like to call a brick hut. It's so cute and the vibe is very contemporary and bright. There's even a cute section upstairs perfect for watching the Georgetown sunset. I am definitely coming back for more!
